triple post, I made some Tater Totdish today. used “Chili” beef from the store (course ground flank vs fine chuck), frozen green beans, a quick batch of creamed corn (Matty Matheson inspired there), garlic cream of mushroom soup, and Ore-Ida tots. kinda want to fancy it up and almost make it like lasagna using fried hashbrowns as the layers, pork/beef mix for the meat, idk what else.
I would love to eat something tasty. Who can recommend a good delivery service? I checked some reviews of popular delivery services https://readyrefresh.pissedconsumer.com/customer-service.html and didn't find a good option. I crave fast food - burger or pizza, something like that.
Crispy Chicken With Za’atar-Olive Rice made this for lunches this week and it’s a solid easy option! I added extra za’atar to the rice and a lot of lemon at the end but other than that followed the recipe. Would definitely make again
Tonight I tried to grate a cucumber for zucchini bread. Thought it was a zucchini this entire time as I've been building anticipation for the bread. My life is a lie and now I have no zucchini bread.
I did a similar thing a couple of years ago with zucchini noodles that were actual cucumber noodles, don’t feel too bad!
For one of my finals in a nutrition class in college we had to cook a full meal from a different culture. We gave the professor a full shopping list of everything we needed (it was cool there wasn’t a budget or anything) and they sent a TA shopping. I needed a zucchini for a recipe, the TA got us a cucumber. I spent a solid 15 min trying to convince my professor it was a cucumber and not a zucchini and she didn’t believe me? I’ve still never gotten over that.
A buddy got a smoker and I got a meat grinder, so I made my own sausage only to struggle to find casings last minute so I improvised and made smoked scotch eggs. Got the egg nice and soft (instead of hardboiled), and the sausage was jalapeno cheddar and then instead of breading, I glazed with a bbq sauce. They turned out pretty darn good. If I do find casings in the future (or just order them online), I'll need more fat in the sausage as I think they would have been slightly dry encased. I used a fatty pork shoulder (like 2.5lbs) and a pack of smoked bacon (12ozs) and I think the fat content wasn't close enough to that 20-25% that was needed. Not smoked, but also made a pretty good jerk chicken on the grill lately.
Also, since we're doing soups, made a really nice pollo pozole verde the other day. Not the prettiest, but it was super tasty (couldn't find hominy, so it just has white beans in there). The chicken was a drum and thigh and they're buried under the broth. I roasted tomatillos/poblano/onion/jalapeno etc. browned the chicken, blended those veggies up and fried them up, then cooked it in the instant pot with chicken stock. Super quick, super easy, super warming for the cold weather snap.
Pretty pissed. I was making, what was shaping up to be, some pretty bomb looking bucatini with roasted vegetables and when I went to crack some fresh black pepper in it to finish it off, I ended up dumping a shit ton of whole peppercorns in it.
Been there! Not with just pepper, but like an Italian grind that had peppercorns in it and whole chunks of dried garlic in it. Maybe you'll be able to get a lot out but you'll have some nice random crunchy spicy pepper bites I'm sure.
