my friends are trying to argue that ketchup is good on eggs and breakfast sandwiches and I just can't accept that
Bacon, egg, cheese, salt, pepper, and ketchup. I feel like that's what most people get around here (NY). Also I prefer on an everything bagel vs a roll
the only time I'd let ketchup touch my eggs is if they're scrambled with a bunch of cheese but I never really eat scrambled eggs these days. I'd still prefer a light/mild hot sauce if I had to choose.
I didn’t fuck with everything bagels until last year and man was I missing out. I feel like I wasted the first 32 years of my life.
Everything bagels are great if I am not in a situation where I need to immediately know if I have lil seeds and black things in my teeth.
I'll eat scrambled eggs with a lil ketchup or even hardboiled eggs. On a sandwich? Sure. It's one of the rare times I'll actually put ketchup on something.
Adapted from Lucas Sin’s golden fried rice base recipe. Charred some peppers and red onions, then added chorizo once the vegetables started to take on color. Cooked the chorizo until it began to crisp up a little and dyed the oil red. I ended up tossing in some black beans and charred corn from taco salads we had a couple days ago at this point too. Added garlic and the whites of a scallion and then the rice. Rice was made a couple days before, spread out on a sheet pan on some wax paper and left in the fridge overnight. Then I separated 4 egg yolks and mixed them into the cold rice until each grain was individual and yellow. Tossed everything together and gave time for the eggs in the rice to cook. Pusher everything aside and dumped the whites into the side of the pan with a little oil and let it scramble quickly before tossing it with the rest of the rice. Served like the Chinese takeouts of my youth.
