That corn looks dope. I've been making elotes so much because of how easy it is. Char corn, toss in shallots, jalapeno. Make a dressing of mayo, lime juice, grated garlic, paprika. Top with feta. So easy and so good. Also I'm waiting on that Portland/Bar Harbor food round up you promised.
Here's a few cooking wins I've had lately. The first is just some Shin instant ramen I spruced up by adding some boy choy, some corn sauteed in butter with tajin, a soft boiled egg, and some gardein plant based nuggets. Despite it being a heat wave, I can never get enough ramen. I have tried to make it myself before (making the tare, the dashi/broth, the aromatic oil etc). but it was so much work and I was massively underwhelmed. I think because I let the dashi get bitter from the kombu maybe? but either way, it was meh so I've been messing around with getting the higher rated packets, and then adding shit to make them more substantial and classy. Here's some pan fried fish (I think haddock if I recall... maybe cod) with pancetta and broccoli and some kind of white wine butter sauce I winged. Couldn't tell you the recipe if I tried, just threw together what I had.
Sorry for double post but I didn't make this so I wanted it separate. Even though I know this thread is mostly home cooked meals, I had this dish below at the Kitchin in Edinburgh, and was amazed by it, especially the visual aspect. As much as I love cooking, I know I don't have the chops, artistry or creativity to do what the pro's do. This was a razor clam dish with some sort of blood orange sauce and served in the shell and it just looked stunning. The overall experience at this place was good but not amazing (unsure if it was worth the money), but this dish certainly was a winner.
Yo, instant ramen is great. If you can make your own, more power to ya, but like, who has time for that lol. Plus it's mad expensive. If you can get a hold of Indomie I think it's the best ramen option and is usually extremely cheap.
That looks delicious. And don't sell yourself short. If you're making your own ramen you could make a dope razor clam dish, haha.
Ha, thanks, but It's the 'art' I lack and I'd guess that's why Ken is so popular in here. There's a skill to a) making it look good in person and b) photographing it so it still looks good. Only a handful of the stuff I make and enjoy do I think looks good enough to share from a 'i know you can't taste this, but you don't need to, because this picture and plating etc. looks so good you know it was bomb'. I know not everything needs to be plated fine dining style, but even simple stuff like a good burger I'll cook and try to photograph and just go ughh, well it tastes good at least.
Thanks I really don’t think I tried as hard on any of these as you think I did. my poblano sauce was literally 1 charred tomatillo, 3 blackened/skinned/seeded poblanos, 1/3 of a charred white onion, cilantro, 5-7 charred scallions whole, several garlic cloves (I think I charred those too), 1/3 of a tomato, and maybe some lime juice. I don’t think I added any other liquid …? Just blended in my ninja blender. the potatoes, I made sure to cut pretty large so I could get a good sear on each side, like 20 minutes total on high ish heat, gotta baby it, and then added the sauce over like 3 different portions. I add some then wait til it cooks out then add more til it’s dry ish or seems like a good texture. Like. Hash risotto. Lol. a lot of these things my attitude is, let’s fuck around and find out. I don’t post my fails
I thought about this some more and I think me roasting everything - I did this just on my stovetop in minimal oil - is what brought out the natural juices to the point where I didn’t actually need any liquids
Here’s some of the food I had in Bar Harbor first stop on the way was Bob’s Clam Hut. Been going here since I was a kid and love their fried fish and clam strips Once we got to Bar Harbor, we had dinner at Havana. Fried fiddleheads to start which were amazing, my first time having them. Filet mignon. I told our waiter that it was a perfect meal! Side Street Cafe was awesome. Here we have "Jeff's Mac & Cheese", which had black beans, ham, onions, and pickled jalapenos. I wish I had another plate of it right now. Also featured in the background is Alina's rack of ribs Homemade breakfast at our bed & breakfast. One of the best meals I had all trip honestly. Atlantic Brewing was very cool. and they were playing Vundabar which was an added bonus. Here's some burrata and korean fried chicken Delicious waffles from our bed & breakfast These are Blueberry Poppers from Melt. Their grilled cheese/melts were great too but this was the star of the show. Cheesecake, graham cracker crust, Maine blueberries in a cinnamon sugar shell, served hot
Portland! Some pre-Phoebe Bridgers shrimp pad kee mao from Boda. Pad kee mao is my favorite dish and this was a great version of it Poutine and a salad from the Duckfat installation at Oxbow Brewing. Both were to die for. We found out afterwards that this was featured on Somebody Feed Phil Soba noodles handmade daily from locally grown buckwheat. I was pretty drunk at this point After a much needed post-drinking nap, time for some late night burritos at Taco Escobarr. Fun place with surprisingly good food Hot dog from Thirsty Pig. I want to go back and try everything on the menu Karaage & miso bbq pork belly buns, with a cup of sake from Mami. Chefs kiss. They let me keep the glass Blueberry donut from The Holy Donut. Made with potatoes!
Bar Harbor is such an amazing place for the views, but I never got to food explore when I went. I have general plans to go back and will get a chance to eat out more. All these places look great especially the fried seafood basket. Also just learned about fiddleheads... They look kind of fibrous like they wouldn't be good.
Chauncey Creek lobster pier in Kiterry is a great spot too. I've been there as I had family in Portsmouth so just a quick hop across the piscataqua.
