Made some bomb honeynut squash soup last night. I highly recommend picking some up if you see them in the store, even if you don't like butternut squash, they are 1000x better.
Doesn't look beautiful but tastes good. I guess it would be considered a risotto. Rice, chicken stock, chicken, carrots, garlic, onion, lots of butter, seasoned salt and pepper. I think I should have added a little more chicken stock.
Made like 7 loaves of Pumpkin Bread this holiday season trying to perfect my recipe. Brought loaves using the final recipe to two Thanksgiving dinners and had a bunch of people asking for the recipe the next day. Here it is if anyone wants to try it: Pumpkin Bread Ingredients 2 c. all-purpose flour 2 tsp. ground cinnamon 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. kosher salt 2 tsp. Fresh crushed ginger (Dorot brand in the freezer section of the store works best) 1 tsp. ground nutmeg 1/2 c. (1 stick) butter, melted and browned 1 1/4 c. granulated sugar 1 c. pumpkin puree 1/4 c. sour cream 2 large eggs 2 tsp. pure vanilla extract Brown Sugar and Turbinado Sugar for sprinkling Pepitas for sprinkling ________________________ Directions Preheat oven to 350°. Butter an 8“-x-4” loaf pan and line with parchment paper. In a large bowl, whisk together flour, cinnamon, baking soda, baking powder, nutmeg, and salt. Brown butter over medium-low heat swirling continuously. Let cool before adding to wet ingredients. In a separate large bowl using a hand mixer, beat melted butter, sugar, pumpkin puree, sour cream, eggs, vanilla and ginger (if using frozen, let soften before adding). Gradually add dry ingredients to wet ingredients until just combined. Transfer batter to prepared pan. Make a mixture of brown sugar, turbinado sugar and a dash of vanilla extract. Sprinkle mixture liberally on top of batter. Sprinkle Pepitas on top of batter. Bake until a toothpick inserted into the center of the loaf comes out clean, about 50 minutes to 1 hour.
I’m in Chicago for work and went to Roister and holy shit this is one of the best cheesecakes I’ve ever had and I literally make cheesecakes for a living. I was too hungry to take a pic of the other food but it was an amazing meal.
Got a sous vide for Christmas and I did tri tip the other night. Easily the best I’ve ever made. I may never cook meat any other way again.
I'm making pizza tonight for the first time with my new baking steel. I also made my first biga dough. I'm excited to see how it turns out.
