    We are actually doing meatless March so I’m going to save that recipe. Anyone else have any good vegetarian recipes especially any with tofu?

    Aldi has a ton of really affordable vegetarian/vegan meat subs and options. I love their quinoa crunch burgers and spicy meatless chicken patties. I like a lot of Half Baked Harvest’s vegetarian recipes, they’re usually pretty easy to make on a weeknight with minimal special ingredients.

    We made beyond meat tacos last night. I really enjoyed them but girlfriend did not like the texture.

    Awesome! I don’t have a stand mixer so Italian buttercream is the bane of my existence. Which recipe did you use?

    Classic Italian Meringue Buttercream
    this one was super straightforward and easy to follow! I will say my kitchenaid mixer did 99% of the work haha. Also it did look like cottage cheese and I did think I messed up, but it came together and piped beautifully.
