I went to a place in NYC once that did pasta but puts it in a cut open wheel of parm and mixes it around in there before serving, absolutely sent me

 

Sukjunamul-muchim. I could eat a disturbing amount of this, especially in the summer.

not strictly speaking NC but bojangles and zaxbys are legit great fast food

 

once I forgot I ate a bunch of bean sprouts and thought I had instestinal worms the next morning

 

skordalia, (extra) tzatziki, and avgolemono are always the basic staples with every greek order. I've even found good canned avgolemono in the grocery store!

There’s a Mediterranean place next to where I went to college and they make all their spreads and sauces fresh daily. Absolutely love the red pepper hummus, tzatziki, harissa, and eggplant spread.

 

My brother raves about the dirty rice from bojangles, I think I only ever had it once but I never tried zaxby's. Should put it on my list to try next time I visit!
