Apple Mail because for some reason my Exchange Office 365 email that I still use from my college as an alumni doesn't have permissions to be set up in Outlook on desktop (but works fine in Outlook on mobile) Kinda hate Apple Mail though. I really like Outlook. But maybe that's because I'm used to using it every day at work.
I just use the Gmail website or app, but the biggest win I’ve found for email has been fyxer.ai it’s been a massive help for inbox organization and speeding up my workflow. I’m not a big AI person but this is the one area I’ve found helpful
Recently switched to proton mail. Miss some quality of life features and speed from Gmail but I like it enough to stick with it.
Mail.app for me for my iCloud and nonprofit accounts. Outlook for my work account. Both aren't great. Nothing else I've tried is great.

In the same boat. I briefly tried the stock Mail app this fall just so to try out order tracking in the Wallet app, but it still sucks for daily use. I don't like the Gmail app, so I'm likely stuck on Spark until something like Mimestream for iOS is released.
At first glance Mimestream looks nearly identical to Spark. @Jason Tate didn't you used to use spark? If so - how does Mimestream compare?
Similar, but Spark started doing so much surf like adding in calendars and AI and scheduling and all this extras “stuff” behind the subscription it just wasn’t working for me. And I really disliked the latest Mac app update. So that was the main catalyst. More straightforward, made by an ex Apple Mail developer. It’s just a nicely made Gmail front end and that’s perfect for what I need these days.
