There's not many ED's that really stick out to me or that I remember usually because I turn if off at that point, ha. I just finished watching Jojo's Bizarre Adventure: Battle in Egypt though and I loved the ED for that.

Not only is the opening great, but the entire Cowboy Bebop soundtrack is the best anime soundtrack I've ever heard. Yoko Kanno is a genius

 

I was literally just about to post this haha. Love the ED for the second half of Stardust Crusaders, the combination of the art and Last Train Home just fits so well.

The ED for Diamonds Is Unbreakable is fantastic too, Savage Garden forever.
