Dude on Black Owned Restaurant Week there was a hilarious dichotomy between dudes wearing hats at the bar, and a very uppity wealthy black man I was serving in ANOTHER ROOM asking me to tell them to take their hats off, and complaining to the manager about it, and ranting to both of us about how it’s disrespectful and undermines the hard work the black community has done to get ahead and assimilate into society (thinking we’d empathize because we’re both black and in fine dining service). Her and I had a BIG laugh in the back after that situation blew over lol

Will never understand why picky eaters don’t simply look up the menu online to see if they even like anything before going to a restaurant to be difficult

 

Difficult tables tonight:

1) old ladies, one lady “vegetarian” but wanted the fish stew with no fish and actually wanted the Caesar dressing while admitting they know there’s anchovies in it, the other expected to have a roast chicken dish somehow cooked quickly so they could be out by 5:40 when they arrived at 5. I was so sweet to them but damn was it hard to ignore the frustration when she sent the soup back and kept curtly saying “no I’m not gonna do that” to every suggestion, and then when they kept asking when the chicken would be done like LADIES I CANT SERVE YOU UNDERCOOKED CHICKEN IT TAKES HOW LONG IT TAKES lol

2) very sweet couple, that did not tell me they were on a time crunch. They came in right after the bar filled up for happy hour so their chilled vodka drinks took an unreasonably long time, like apps half done… and then when I finally brought them I stupidly spilled a little bit of one of them like an IDIOT. Then the kitchen somehow missed the fact that I pressed “fire course 2” (I.e. the entrees that are pre-prepped and held until they’re ready to be sent out) and after trying to be patient for half an hour, food for another table I “fired” 15 minutes later came out first. wtf.jpg. They barely touched their entrees when they finally came out, and told me suddenly they had to leave, so we had to comp their food and the drink I spilled lmao. (They tipped great but it was very stressful having no control of all their shit taking forever)

3) my ex boss’s boss from the Pendry came in. He was great, but his wife made me sample her 4 different wines before she finally liked one (I had to open a new bottle for all four). Then she simply remained wish washy about whether or not she’s going to order an entree for like an hour. So after wine sampling forced me to hold apps for like 35 minutes, then she takes another 30 minutes before she tells me to go ahead and send his food it cause she’s not ordering. He even explained to her this would throw off the timing of their meal but she didn’t care lol. Whole thing dragged forever and it was embarrassing to give slow service to my ex boss but, I can’t make it happen any faster if you don’t order your entree up front so they can prep while you’re eating apps. this whole thing of course made me much slower to get to my other tables cause we treat managers of other fine dining joints as VIPs and I couldn’t just make them wait while I handled everyone else.

Weird night. It was slow but shit was a pain in the ass lol. Room charges weren’t working so we had to write everything down charge wise for the rooms to account so reservations office could account for what they paid and then delete what they ordered manually lol. I also sent an order in for a cocktail special but the bartender brain farted and made an old cocktail special that was not the one for tonight lol. Just a bunch of dumb shit but it was my last shift before TOUR!!!!!

 

I had no difficult tables

 

I have had one very difficult baby so far

 

To be clear, at an Outback or whatever chain restaurant, it’s fine to order the apps and wait to order the meals. That shit is like designed for speed and not comfort lol, every part of the menu is “can we make this quick”. Fine dining is not like that though, they really do be baking your bread and shucking your oysters fresh and making your sauces from scratch every time.

I tell every table that I tend to take the app and entree order together to make sure we can course it for you and make sure it’s ready when you’re ready. But people still go against it sometimes and then it’s all on me to figure out how to still make it right. Sometimes that means knowing I have to send a medium well lamb right away before they get their apps, while I can wait until they finish their apps to send risotto and ravioli. Sometimes I just hold the apps and only send the bread and then I take the rest of the order when the drinks are out. Then I finally send the apps and still course everything. All of that was impossible this time.
