Put on at 250 at 11am
Hit a pretty persistent stall around 160-162 so I bumped up to 275
Wrapped with butcher paper at 165
Pulled at 200 (wish I could’ve waited until 205)
Rested for about 45 minutes while I cooked everything else.

I think next time I need to make sure it’s on at 10am. That extra hour would’ve been money
