It’s also not a joke that I am good at what I do. I went through the sales / numbers recently and I legitimately sell more wine than the last Somm or the new / current Somm do lol. The new one knows way more about Spanish wine than I do (i mostly am good with French wine and Western Hemisphere wine) and the last one knows way more about expensive wine from expensive vineyards than I do but a lot of selling wine isn’t just knowing about it, it’s how you talk about it with guests.

Cause most people who would buy a nice bottle of wine are not vinos who have been to all those vineyards and have $2 grand to spend on dinner. Most of them are people celebrating who have money but not a LOT of money and just want something that fuckin tastes good lol, they don’t care about prestige or whatever, they care about “is this Somm just selling me the most expensive bottle he can or does he care about my tastes and what I do and don’t like about wine?” And that’s the part I’m good at
