There are diminishing returns on guitar costs for sure but the number is waaaay above $500 for that, and Fender is a bad comparison point because there are so many bad Fenders out there in general

 

any big brand like fender and gibson are so hit and miss at every price point. incredible and dog shit guitars from their entry levels and their expensive levels (overseas Fender and custom shop/studio Gibsons and custom shop). feel like with smaller builders, even ones like schecter or ibanez or whatever, the difference in quality between one of their $300 guitars and their $1200 or whatever is astronomical

for acoustic guitars, cost / quality is way more of a factor.

for electrics, there is definitely a point of diminishing returns. you can invest in fancy pickups and electronics but beyond that it’s just paying for brand name.
