Really a lot of countries make their food from scratch traditionally - trying to jar and slice and package and process and standardize everything, and relying heavily on chemicals and preservatives, is largely an American thing to justify

1) our over-reliance on capitalism to the point it cheapens things with cultural value just to achieve economies of scale
2) our workaholic culture for an advanced nation that encourages working families to try to cook at home AND both parents work 50 hours a week AND barely giving leeway to parents of young children who have to make sure they eat

 

I feel like an utter boomer asking this, but I am not in the know with music these days. Heard a song by South Arcade and now I can't stop listening to them. Anyone else into them?

And I’ll have you know I was friends with more frats than anyone else at college. Lived with 7 dudes one summer, 4 guys the summer before that, and 3 when I met Dave. Dude talk is just chatter with more fart jokes. And very specific references to tales of sports history of yesteryear.

 

It’s probably I can’t help myself but argue to death on takes I don’t agree with on DC, Boston, and I would’ve given myself an aneurysm arguing about the damn chip dip. So Dave just tells me when to look at the thread lol

it feels fiscally irresponsible to waste food I already either paid for at a restaurant or spent a whole grocery trip getting the ingredients for. Even if it’s cheap food, I bought that cheap food for a reason to be economical, I’ll save half a box of Mac and cheese for at least a day or two before deciding “nah I’m not into it”

 

And Matt is just a crazy person who thinks he will get violently ill if he eats food that has spent 18 hours in the fridge

im the other kind of crazy person who’s like “should i eat this? Well it doesn’t smell bad and I haven’t gotten food poisoning yet” lmao

I either have a really strong stomach, or I’m correct that people overthink leftovers. Not an argument I really wanna have, lol. But I have eaten stuff 10 days old from a restaurant and it tasted fine and I was fine, I might microwave it longer just to “be sure”. Even when we’re not talking about leftovers I’ve literally taken a (sealed) ziploc bag of raw chicken or steak out of my freezer and finally took it outta the fridge and cooked it a week later and been fine every time lol.

generally I trust that human senses evolved this way for a reason. If it feels slimy don’t eat it. If it smells bad don’t eat it. But if it feels and smells and tastes exactly how you would expect, it’s perfectly fine. Food bacteria creates slime, smells off, tastes off, if there’s not enough of it to create any of that then I trust that I won’t get sick. I only get suspicious of non-fresh food that smells fine and is refrigerated, if it’s something that’s got a LOT of seasoning like curry or taco meat, cause I could see that masking the bacteria odor. (Wouldn’t mess with food that sat out UN refrigerated for too long though, cause at warmer temperatures bacteria develops and spreads EXPONENTIALLY faster, and food that was good 6 hours ago can definitely suddenly be bad in that instance).

I am willing to really push it with salt cured meats more than most people, like, bacon or smoked salmon stays good way longer than people think. Craziest thing I’ve done recently is eat smoked salmon that had been in my fridge for like a month and wasn’t totally sealed, but again it tasted exactly how smoked salmon should and I did not even have a bad poop much less get sick. Salt curing was invented in the Middle East and that’s how they preserved food in extreme heat before refrigeration existed - if salt cured meat can survive several days unsealed in open desert heat it can survive a lot longer in your fridge

 

No no, I argue against the cold takes also I smoke ribs so I have the upper hand there

 

And back into my hole — six more weeks of thread winter for me

 

I will say that I don’t subject anyone else to that. Obviously if I’m cooking for anyone else I take all precautions and would never try to make that decision FOR them. But I’ve gotten a little “loose” with myself and food from time to time to try to make the most of my grocery trips - and while I acknowledge I’m taking a risk with that shit sometimes… so far my intuition hasn’t yet failed me lol
