You know, my job could be really good for me if I stick with it.

I did the math and if I do indeed become a captain at work, I'd make $500-$1000 after tax more per paycheck off the hourly rate, giving me a minimum of $1700 after tax per check on slow season when I'm working 7-8 days a pay period, and a maximum of like $3500 per check in busy season when I'm working 10 days a pay period plus the boost in tips. I'd say that averages to about $2300 per check over a year if I'm being conservative, which is $60k a year after tax (so somewhere around $75k before tax).

I also would be less likely to be cut from work on slow days and would thus work more days as a captain even in slow season so that minimum of $1700 would rarely happen, that's only if I'm personally taking days off when it's slow anyway to promote a huge show.

And that's IF business stays the same, not accounting for busy season being even busier and it being busy more of the year which is very likely to happen since we just got Michelin Keys and are heading towards dining-specific Michelin stars.

This could legit become an $80k+ salary-equivalent serving job for me in the next year.

Yes. Which isn’t like GM or sales but it’s the head server who is setting service standards, which I already basically am since all 3 of their long term employees who trained me have all gotten old and tired and left (well one of thems not old but still was there a long time and was “over it” and wanted to be part of a friend’s startup restaurant instead).

I joined this restaurant at the right time cause they had the same servers for like 4 years sans maybe one or two temporary / part time hires during busy seasons

all those servers used to be able to handle a whole “room” of the restaurant to themselves without slipping up too much - but I am now the only employee who can do that, and I think I am in a position of leverage now that they’ve realized they can’t take my skill level, willingness to learn new things, and on-floor personality for granted.

There’s opportunities around now that the older employees left for sure. The sommelier is doing so good with the wine program that he might not need to serve tables much longer and might just get paid a larger salary + commission to only sell wine like he should. And one server who got hired same time as me really struggles to handle heavy business but she is a super expert about coffee and tea so she could end up being our breakfast and tea service captain and getting elevated just like me

 

When you’re the first restaurant in your entire region to get Michelin keys that boosts your business a LOT, it becomes a legit destination not just a spot the locals know, so the money WILL be in the budget

and it also raises the pressure to be perfect a lot because you can lose Michelin keys / stars as easily as you got them, so they’re definitely given an incentive not to try to coast with half ass talent, and to show the legit talent they are valued for their consistency so they don’t walk
