I'm considering being a somm myself but I'm also realizing it's real long hours. They work 60 hour weeks easy during busy season

 

gotcha. my comment was both genuine question and sass. feel like the role of selling wine lends itself to privilege and snootiness most often. but ultimately i dont know

 

In my experience, as someone learning about food service from the bottom up, it's usually because your job becomes more and more to tailor yourself to snooty ass people the higher up you go in the industry. It's one of the real issues I'm having about it, that like, if my restaurant actually gets Michelin stars I won't be able to be authentic with my approach at work. (the hotel already got two Michelin "keys" this year, which includes the restaurant, but as we get more attention from Michelin's dining accolades the culture of the restaurant has to change and get all stressful and shit, so many archaic "rules" bout how dining is "supposed" to be presented.)

Sucks cause i genuinely love wine and think the art and science of making it is awesome, every region of every country has their own distinct way of doing it with the specific soil and climate they have, some of those traditions date back to Medieval times etc, but I can't nerd out about it the way I'd want to because I'm surrounded by stuffy people the whole time lol.

 

we are the first restaurant/hotel in Maryland to get Michelin anything though, so that's pretty cool. We got two "keys" and my old job at the Pendry got one and that's it (Four Seasons got 0 lmao.) Michelin was only interested in DC restaurants before. Says a lot about my current job - they clearly came to review us in particular.

 

we're going back to the nice restaurant tonight and their sommelier rules

we did a trip probably like five years ago from LA - Big Sur - Sonoma and it was dope

driving the PCH is insane but awesome

 

yeah I know lol I just hear similar things about the PNW as well and there's definitely a difference between west coast and east coast general culture and mentality, that's more what I was getting at.

 

I think I'd love living on that side of the country and have more "friends" but fewer Friends if that makes sense

Its 2024 lol those people havent existed in new york city in a very very long time. Manhattan and brooklyn and even some parts of queens now are all either rich stuck up finance ppl or broke stuck up yuppies who are faking it until they attempt to make it.

 

this doesn't apply to southern California and you're right about that, but the PNW doesn't have the same diversity and the same amount of ugly scars from this country's racist / classist history, so I wonder about how much their brand of liberalism includes intersectional understanding of how other cultures can struggle in different and worse ways than poor white people already struggle.

 

you're fixating too much on specifics lol. my point is that people from NYC/DC/Cape Cod/etc. can be just as privileged as people in LA. it's the same in literally any massive city in the country.
