blood brothers were great. The crowd was a top 3 worst crowd I’ve been in

 

HOT take:

filet mignon is overrated. I mean, it’s not not good, of course it’s good, but a cut of steak with marbling tastes better AND costs less AND comes in larger portions.

Not to shit on your wonderful sounding meal but I will ALWAYS take the ribeye

 

Hopefully the crowd is better on January 8th when you see Terrain

(I’m joking it will be 0 hard feelings if you don’t want to come to a show on an icy Wednesday)

 

I actually had wagyu last night that was *not* good. It wasn’t A5 or anything, but it was overcooked and disappointing.

other than wagyu, I’m always going ribeye

 

That’s part of the problem with filet’s for me, if they’re even slightly overcooked the quality reduces dramatically. Filets get this weird chalky texture at medium and up. A ribeye can be over cooked to medium or even god forbid, medium well, and the marbling will still make it savory and the texture is still meaty and doesn’t become chewy

 

Agree that filet is very delicate and dependent on the cook but the filet ceiling is so good, and i know this steakhouse so i know how well they cook and sear the meat but god dammit if i dont love a ribeye.

If Filet was cheaper I’d get it more but it’s usually like “hey do you want to pay $64 for 7 ounces of this OR do you want to pay $41 for 12-14 ounces of even better tasting meat that’s less sensitive to how it’s cooked” like duh lol

a tiny sliver of the fat with a big piece of steak on your fork is the way. Never enough to notice the texture.
