it’s possible to value authenticity without being dismissive of other things for one, I love authentic Mexican food and simply don’t compare it to Tex Mex cause Tex Mex is good in its own way regardless if it’s not authentic.

for two there are definitely scenarios where the way something “evolved” is a complete bastardization of the original’s quality and process and in those cases (which is true of a lot of Italian food tbh) I support people being loyal to the original methods
