That’s my favorite kind of French fry. Hand cut shoestring fries that you double fry in peanut oil (once for a few minutes at a moderately high temp, and then again for like 2 minutes at a very high temp) for that crispy outside / doughy inside / skinny non-potatoey texture. Baltimore pubs make this specific style of french fry well and I love it.

they should range in appearance from gold/tan to a brownish orange and that just depends on the type of potatoes and the fryer
