There’s a spot in Baltimore that makes incredible injera. And like, other Ethiopian spots I’ve had might have slightly better veggies and meats potentially, but if you go to a spot that makes their injera really good, it makes everything else taste better

so weird how a starchy / yeasty / spongy bread actually makes savory dishes taste even MORE savory and adds to the flavor rather than just being a vehicle for it

 

Love love love Ethiopian food. There’s a food hall here that has that, and Venezuelan food and it’s very difficult deciding between the two every time lol
